The Winter Table: Whipped Butters + Blueberry Compote with Chef JB Parenteaux, from Nostalgia Culinary Company

Join Chef JB Parenteaux for a hands-on afternoon that turns familiar ingredients into something unexpectedly impressive. This session centres on two quick transformations: turning ice-cold cream into fresh butter and thickening a vibrant blueberry coulis in minutes. Everything comes together over warm fried bannock prepared in advance, so you can taste the full contrast of texture and flavour.
Along the way, Chef JB will share practical technique, kitchen troubleshooting, and a few reflections on food as memory and place, woven naturally into the cooking.
In this workshop, participants will:
  • Watch cream churn, break, and transform into fresh butter, then learn how and why to wash it for better flavour and shelf life
  • Make a bright blueberry coulis using blender technique and modern stabilization for a smooth, spoon-coating finish
  • Plate and taste the final dish on warm bannock, learning simple ways to balance richness, acid, and salt
  • Ask questions and get real-time troubleshooting tips to recreate the techniques at home

  • This is a small-group session (15 spots) to keep it comfortable and interactive.
